100% white wine from the Pedro Ximenez grape, which is overripe on the vine for 21 days in addition to the conventional harvest.

It is pressed very gently with yields per ton of grapes producing less than 600 litres of juice. Immediately after pressing it is introduced with its skins into 300-litre French Oak barrels.
The musts are aged on lees with soft battonage for six months in barrels, reaching a very complex structure.

On the nose it is marked by French Oak that is attenuated with notes of raisins and dried plums. Lacks oxidation. There are no stridency, but harmony of all the elements. The natural aromatic characteristics are markedly unique.

In the mouth, the non-existent alcoholic sensation is surprising despite its 14%. It is broad and attacks all organoleptic receptors since, from the point of acidity to the aftertaste of wood and ripe fruit, they are persistent and full of fullness.

About Casita Miro Wines

Miro Vineyard is in the Onetangi wine-growing region and comprises a 4.2 hectare vineyard and the outstanding Tapas restaurant called Casita Miro. Miro is the closest vineyard to Onetangi Beach, a summer playground for holiday makers. Views from the vineyard are spectacular, looking out over the vines, the village and the sea.

Grapes in the region ripen to a rare succulent intensity in the hot summer sun. The mineral rich soil provides the vines with flavour-enhancing elements. Red grapes such as Syrah and Bordeaux varietals are our focus here but we also grow beautiful Pinot Gris, Chardonnay, Albarino and a small amount of Viognier that is grown primarily to blend with the Syrah.
