Moderately deep, light golden-yellow colour, lighter on edge. This has a very fine bead with gentle persistence of the bubbles. The bouquet is softly concentrated and voluminous in presence, gently unfolding aromas of Pinot Noir yellow stonefruits along with bready yeast, nuances of autolytic brioche and toast and complexing nutty elements.

The nose is very harmonious in expression and builds in depth and breadth with aeration. Dry to taste and medium-bodied, the palate features yellow stonefruits at the core, melded with layers of bready autolysis and subtle nutty aldehyde complexities. The mousse is soft and enhances the soft textures, gentle acidity and rounded mouthfeel.

As the wine flows, the yeasty and nutty detail integrate with the stonefruit notes and carry to a soft, refined, complex, savoury finish. This is a harmoniously layered Methode Traditionnelle that subtly reveals its complexity.

Palliser isn’t just about our past history we’re also planning ahead for our future history.

The Wharekauhau vineyard is certified organic and the Winery and Om Santi blocks are undergoing conversion due for certification in 2021. Other vineyards will follow in due course. We feel this will provide the truest representation of sense of place as well as improving the soil for future generations.

About Martinborough
The Martinborough Terrace, where we grow our grapes, is a small but very special area of land located at the southern end of the North Island. Framed by the Ruamahanga and Huangarua Rivers which helped carve out the Terrace centuries ago. The land is a stony silt loam overlaying varying depths of ancient free draining river gravels. The climate is dry with frosts and strong winds challenging us at every turn but when the harvest comes all the hard work is more than worth it.

We own seven vineyards on the Terrace. Although they are within walking distance of each other they are all produce quite distinctive wine styles reflecting the differences in soils and micro climates. It’s a perfect combination that, for us, creates perfect wines.
